Uncle Bill’s Sour Cream Banana Bread
This banana bread is very moist and is sweet. We tried cutting back the sugar in the recipe, but it just did not turn out as well. So back to the original recipe! Because this bread is so moist, it keeps and freezes well.

Ingredients
Optional
  • 1/2cup chopped nutsnot in Uncle Bill’s recipe, but we add them because we like nuts.
Instructions
  1. Preheat the oven to 375 degrees F. Cream the butter, sugar and eggs
  2. Add the mashed bananas and vanilla extract.
  3. sift: flour, baking powder, salt and baking soda. (Alternate method is to whisk together the dry ingredients.)
  4. Add the dry ingredients to the wet ingredients alternately with the sour cream. Mix until just combined. Take care to not over mix the batter or it will lead to a tough bread.
  5. Place batter in a greased loaf pan.
  6. Bake at 375 degrees F for 50 minutes or until a toothpick inserted comes out clean.
  7. Remove from oven and cool on rack before slicing.
Recipe Notes

If you can find one of these long loaf pans, try it out. You get more slices per loaf.
